Food Borne Illness

Course Description: This course is tailored for licensees (RNs, LVNs & CNAs), administrators and caregivers, who purchase, prepare and serve food to residents of community care facilities.

Course Objectives: At the end of the session, the participants will be able to:

At the end of the course, participants will be able to -
  • Define “food borne illness” and “food borne outbreak”.
  • List common causes of food borne illness and enumerate the three (3) types of food contaminants.
  • Describe characteristics of foods that are potentially hazardous (PHF).
  • Discuss how bacteria grow
  • Define anaerobic and aerobic bacteria.
  • Define the different bacteria and viruses that causes food borne illness
  • Describe appropriate personal hygiene for persons who prepare food
  • Describe how to use food thermometer properly.
  • Discuss how to receive and store food safely.
  • Describe how to prevent cross contamination of foods stored in the refrigerator.
  • Discuss what it means to “sanitize”.
  • Enumerate the 6 steps in manual cleaning and sanitizing food preparation areas.
  • List and describe four steps of pest control.
  • Discuss some rules for handling garbage to prevent pest infestation.
  • Review ­Sections 87555, General Food Service Requirements (RCFE); Section 80076 (GH & RCFE) and verbalize knowledge of regulations related to food service in community care facilities (ARF, GH & RCFE).

Instructor: Estrella B. Manio, MS, RN, NP, Ms. Manio brings in a wealth of experience as a Pediatric Nurse Practitioner, Clinical Nurse Specialist, Assistant Clinical Professor and Nurse Educator at the University of California, San Francisco. She had authored numerous papers and lectures on various topics; prepared teaching aids; co-authored numerous publications and was involved in several researches on health related topics.
